The careful scientific researches made in Denmark during the last
decades as to the organisms of fermentation and whose fundamental results
are due to the experiments made by the late Professor Emil Chr. Hansen,
form the basis of a regular and steadily increasing production of yeast
suitable for exportation.
The production of yeast comprises two different branches:
1. The preparation of Pure Yeast Cultures, which in their turn are
the foundation of
2. The manufacture of yeast as a commercial article.
The pure cultures are made in this country chiefly by one labora-
tory (see below), which sends pure cultures of brewing and distilling
yeast etc. to all parts of the world.
The yeast of commerce is again subdivided into two main pro-
ducts, viz:
1. Yeast used in Breadmaking, which is manufactured in yeast fac-
tories and as a by-product in distilleries, and
2. Pitching yeast used in distilleries and breweries. Also with regard
to these products a rather considerable export has been worked up. The
value (1913) 286.000 Kr.
The yeast of commerce may, in a pressed state and when placed
in refrigerating chambers, be sent to the adjoining countries. When for-
warded to distant lands, yeast must previously be exposed to a drying
process. The pure cultures are better able to stand a protracted trans-
portation and are exported in a liquid as well as in a dried state.
