The industry considered in this book has all the signs of vitality. On the scientific side the facilities for the study of cacao cultivation are being slowly but continuously improved—an important step in this direction being the opening of the West Indian Agricultural College in Trinidad in 1922—and the annual output of research on matters related to cocoa and chocolate is being greatly increased by the Research Association founded in 1918. On the purely industrial side there are similar signs of healthy pro-gress. On the one hånd, we have the rapid increase in the production of the raw material, an increase which will continue unless Nigeria and the Gold Coast suffer a set-back. On the other hånd, we have the enterprise of the manufacturers who, aided by the charms and virtues of cacao products and in spite of high duties, have made consumption keep pace with production. The author hopes this little book has enabled the reader to take a comprehensive glance at the whole industry, and that it will incite him to study the current literature and larger works dealing with its various branches,
